Thyme & Company is Charlottesville’s lone Lebanese restaurant. It is also the pride and joy of chief cook and bottle-washer, Rami Daniel. Daniel hails from Jordan. From the moment he opened his restaurant on the UVA Corner, he intended to re-create the flavors and love of his mom’s kitchen table at home. He’s achieved that in spades! The hummus at Thyme & Company, made from 800-year-old olive trees in Lebanon, is widely-considered by experts to be the best in town. Daniel insists that all ingredients in his basic menu — from the manousheh to the salads to the shawarma bowls —  as well as their preparation, be as meticulous as possible. The result is a divine and exotic meal. Served at two community tables or to take-out from a small kitchen divided by a counter top, this informal dining experience is a marvelous discovery in town and one we highly recommend.
